Carbonara Recipe

Hi everyone!

Remember back in October I shared with you some of my Favorite Recipe Sites? Well since then I've fallen in love with a few more, one being Laura in the Kitchen! Her recipes are great and as you may know I LOVE watching cooking videos and her's are done so well. I would love to make a recipe blog/site one day.

You will need:1 Small Onion, chopped
4 Slices of Bacon, chopped
1 tsp of Olive Oil
2 Eggs
2 Tbsp of Heavy Cream
¼ Cup of Freshly Grated Parmiggiano Reggiano
Fresh Ground Black Pepper and Salt, to taste
8 oz of Dried Spaghetti


 1. Boil water for your spaghetti and cook it according to the package directions (don't forget to salt the water) and add in a few drops of olive oil so that the spaghetti does not stick. 


While that is cooking...


Chop up your bacon and onion...
then leave it there for the time being.


In a separate bowl whisk the eggs, heavy, cream, pepper, and Parmesan cheese. 




At some point in this process you will want to turn on your stove to heat the skillet for your bacon and onions.
(It is optional whether you'd like to add the tsp of olive oil)
Put the bacon in and cook for literally 1 minute. 


Add the onion and cook for a few more minutes (like 4-5)


Don't forget about your spaghetti! Once in a while give it a stir.




Once the spaghetti is done drain it well.


Take your skillet off the stove and quickly add the spaghetti to it and pour the egg mixture over that. Then working quickly, mix everything together. 
It is important that you take the skillet off the stove so that the eggs don't cook.






It turns out sooo good! My sister Lena, who is such a picky eater really liked this. The bacon and onion create such a nice flavor together and the bacon isn't overpowering or anything. (I'm not a huge fan of bacon but loved it in this recipe!)


Next time I will add mushrooms. I think that will be a great addition to the dish.

She does say to add a little salt to the bacon and the egg mixture-but I liked it with just the pepper! The bacon and spaghetti were salty enough. Also I did not use freshly grated Parmesan and it tasted real good. Finally, of course when you need it we didn't actually have spaghetti-I used fettuccine but I'd recommend using spaghetti instead.
